Our Japanese Omakase Menu in Singapore

Three menus, one course. Eight seats, one sitting a night. Chef Maka crafts each evening around what arrives from Toyosu that morning, so there is no fixed menu, only a fixed standard.

– Dinner Omakase

Three menus, once arc

Every menu follows the same journey from the opening plates to the last nigiri. What changes is depth: how many courses, how rare the catch, and how long a single plate takes to make.

秋月

Syuugetsu ———————————— $230++

16 courses or more

A seasonal introduction to Chef Masa’s style, and the whole shape of the evening. Appetisers, sashimi, cooked courses, a long run of nigiri, soup and dessert, drawn entirely from the day’s catch.

Good to know

Our entry menu, and the one most first-time guests choose. No advance notice required beyond your booking.

楓

Kaede ———————— $320++

18 courses or more

More cooked courses, rarer cuts, longer preparation. This is where Chef Masa shows the work that happens before service: slow-cooked monkfish liver, charcoal work over binchotan, and seasonal fish that only appears for a few weeks a year.

Good to know

Three days notice, so the fish can be ordered for your evening.

22 courses or more

A seasonal introduction to Chef Masa’s style, and the whole shape of the evening. Appetisers, sashimi, cooked courses, a long run of nigiri, soup and dessert, drawn entirely from the day’s catch.

Good to know

Our entry menu, and the one most first-time guests choose. No advance notice required beyond your booking.

All prices are per guest and subject to service charge. No GST. Menu names and courses change with the season.

What to expect

The dishes change daily. The evening does not.

Nothing is portioned two days ahead. Chef Masa writes the evening after the Toyosu delivery lands, so the progression below is the shape of a dinner at Sushi Masa, not a list of what you will be served.

01

Opening appetisers

Small seasonal plates, cold and warm. Edamame tofu, marinated aubergine, mozuku seaweed, a clear broth with the first mushrooms of the season.

02

Sashimi

The day’s catch, cut to show texture before flavour. Served plainly, because at this point in the evening nothing needs help.

03

Cooked Courses

Simmered, fried to order, or grilled over binchotan. Monkfish liver cooked slowly in bonito broth, seared bonito with our onion soy, whole mehikari fried until every part is edible.

04

Nigiri

The heart of the evening, shaped one at a time and passed straight across the counter. Tai, shiro ika, aged akami, nodoguro, chutoro, kohada, flamed otoro, uni, anago.

05

Tamago and Soup

Tamago to close the counter work, then a clear soup or miso. Quiet courses, and the ones regulars talk about most.

06

Dessert

A seasonal finish, light enough to leave the fish as the last thing you remember.

Dishes named above have appeared on past menus. They are examples, not a promise. Ask Chef Masa what came in today.

酒

Sake and pairing

Sake is poured to follow the courses, by the glass or by the bottle. Tell the counter what you enjoy, or leave the choice to Chef Masa, which is what omakase means in the first place.

Private bookings

The counter seats eight comfortably and ten at most. Sundays are kept for private bookings, and the whole room can be taken for a celebration, a quiet anniversary, or a table that would rather not be overheard.

Before you Book

A few honest notes

Dietary requests

Tell us when you book. No meat is served at any time. Allergies and shellfish adjustments can usually be worked around with notice.

Changes and cancellations

We ask for 72 hours notice. Ingredients are ordered for your seat the same day, so late changes and no-shows may be charged.

No lunch service

Mornings belong to preparation. Serving lunch would cost the dinner its edge, so we do not serve it.

What to wear

Smart casual. Please go easy on perfume, as it carries across a small counter.

Level 6 of Cuppage Plaza, the only restaurant on the floor. Five minutes from Somerset MRT, Exit B.
